Origin
The beans are grown in the municipality of Manzanares, in the heart of the Caldas region, at an altitude of 1,600 to 1,950 meters. This region is part of Colombia's famous "Eje Cafetero" and is known for its ideal microclimate and rich volcanic soils. The varieties used – Castillo and Caturra – are grown by a group of small, local farmers committed to sustainable agricultural practices.

Natural decaffeination
Caffeine is extracted from the green beans using the ethyl acetate (EA) method, based on natural sugarcane byproducts. This process is done locally in Colombia and is gentler than many other methods, preserving the coffee's original flavor notes. Moreover, this model reduces the ecological footprint because the decaffeination process isn't performed elsewhere in the world.
